SEAFOOD QUESADILLAS
Topped with spicy shrimp and scallops, these seafood quesadillas make a perfect appetizer that?s sure to become one of your best-selling items.

Preheat: Amana® Convection Express Oven or Veloci™ to 475 degrees F.

Accessory - Griddle for the Convection Express. For the Veloci use a pizza stone.

Seafood Filling:
8 ounces fresh or frozen, peeled and de-veigned large shrimp (thawed)
8 ounces fresh or frozen sea scallops (thawed)
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon crushed red pepper
1/4 teaspoon ground cumin
1 tablespoon fresh lime juice

Cut shrimp and scallops into bite size pieces (about 1/2-inch). In medium sized oven safe dish or pan, combine the shrimp and scallop pieces, olive oil, salt, crushed red pepper and cumin.

Cook for 45 seconds. Add additional time if you prefer additional crispiness.
